Instructions

  1. Preheat your oven to 350°F and lightly spray a 9 x 13 baking dish.
  2. Boil the scrubbed russet potatoes in a large pot until very tender, about 45-60 minutes. Allow them to cool before peeling and cutting into chunks.
  3. In a mixing bowl, combine the cut potatoes with sour cream, shredded cheddar cheese, salt, pepper, and three-quarters of the sliced green onions.
