  • 4 tbsp avocado or olive oil
  • 4 cloves garlic, minced
  • 2-inch piece fresh ginger, minced
  • 2 serrano peppers, minced
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • ½ tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp kosher salt, use more as needed
  • 1 tsp freshly cracked black pepper
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 can (14 oz) crushed tomatoes
  • 1 tbsp lemon juice
  • ½ cup fresh cilantro, roughly chopped

Instructions

  1. Rinse and soak lentils in cold water for at least 6 hours.
  2. Heat oil in a large skillet over medium-high heat. Sauté garlic, ginger, and serrano peppers for about 3 minutes.
  3. Add spices and cook until fragrant, around 30 seconds.
  4. Stir in lentils, crushed tomatoes, and coconut milk. Reduce heat to low, cover partially, and simmer for 20–25 minutes until lentils are soft.
  5. Finish with lemon juice and chopped cilantro before serving.
