  • 2 tbsp Dijon mustard
  • ¼ cup chopped parsley
  • Salt and pepper, to taste

Instructions

  1. Cook the cubed red potatoes in a large pot of boiling water for 10-15 minutes until fork-tender. Drain and allow cooling.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, and apple cider vinegar until smooth.
  3. Add cooled potatoes, chopped red onion, crumbled bacon, shredded cheddar cheese, chopped parsley, and dill pickles to the dressing. Gently mix until combined.
