  • 3 large chicken breasts, cut into bite-sized pieces
  • 2 small heads of broccoli, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • ½ cup soy sauce
  • ½ cup honey
  • ¼ cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder slurry (2 tsp arrowroot + 2 tbsp water)
  • ½ cup mayonnaise
  • 1 tbsp sriracha (for mayo)
  • 23 tbsp water (for mayo)
  • Sesame seeds (for garnish)

Instructions

  1. Rinse the rice until the water runs clear; cook according to package instructions.
  2. Marinate chicken in a mixture of olive oil, spices, soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, and arrowroot slurry for at least 15 minutes.
  3. Preheat air fryer to 375°F (190°C), then cook marinated chicken for 15-20 minutes until crispy.
  4. Steam or sauté broccoli until tender-crisp.
  5. Assemble bowls with rice as the base; top with chicken and broccoli.
  6. Mix mayonnaise with sriracha and water for a drizzle; garnish with sesame seeds.
