  • 1.5 lbs boneless, skinless chicken breasts
  • 4 ears of corn
  • 1 cup long-grain white rice
  • 1 can black beans (15 ounces)
  • 1 avocado
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp butter
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 lime
  • 1/4 tsp chili powder (optional)
  • 2 cups water
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. Prepare the chicken by mixing cubed chicken with olive oil and spices until coated.
  2. Cook the chicken in a skillet over medium-high heat for about 5-7 minutes on each side until golden brown and cooked through.
  3. Grill, boil or roast corn until tender; then cut off kernels.
  4. In a bowl, combine corn with mayonnaise, sour cream, cotija cheese, cilantro, lime juice and chili powder.
  5. Cook rice according to package instructions.
  6. Assemble bowls by serving rice as the base topped with chicken, street corn mixture, black beans, and diced avocado.
