  • 4 large eggs (separated)
  • 1.5 cups non-fat Greek yogurt (350 g/12.5 oz)
  • ⅓ cup monkfruit sweetener (70 g/2.5 oz)
  • ⅓ cup cornstarch (40 g/1.4 oz)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 330°F (160°C).
  2. Separate egg yolks from whites.
  3. Beat egg whites until stiff peaks form; set aside.
  4. In another bowl, cream egg yolks with monkfruit sweetener and vanilla until fluffy.
  5. Mix in Greek yogurt until well combined.
  6. Sift cornstarch into the mixture and blend gently.
  7. Fold in beaten egg whites carefully.
  8. Pour batter into a lined 7×11 inch baking dish and place on a larger baking sheet filled with boiling water.
  9. Bake for 45 minutes at 330°F, then increase temperature to 350°F and bake for an additional 15 minutes.
  10. Allow to cool in the oven for 1-2 hours before serving.
