  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1/4 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup + 2 tablespoons oat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • ~1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cooked sweet potato, almond butter, maple syrup, and vanilla extract. Mix until combined.
  3. Add the dry ingredients: coconut sugar, almond flour, rolled oats, oat flour, baking powder, and baking soda. Mix gently until just combined.
  4. Fold in the chocolate chips until evenly distributed.
  5. Form 8-10 evenly sized cookies using wet hands and place them on a parchment-lined baking sheet.
  6. Bake for 12-14 minutes until lightly golden on the edges.
  7. Allow cooling on the baking sheet for at least 10 minutes before transferring to a wire rack.
