  • 1 lb ground turkey (or ground beef)
  • 1 cup canned tomato sauce
  • 1 tablespoon taco seasoning
  • 1 cup black beans
  • 1 cup frozen corn
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
  2. In a sauté pan over medium-high heat, heat olive oil. Add diced onion and garlic; sauté until fragrant.
  3. Stir in ground turkey (or beef) and cook until browned, about 10 minutes.
  4. Halve the bell peppers lengthwise and remove seeds. Place in the baking dish.
  5. Mix cooked meat with tomato sauce, taco seasoning, black beans, corn, and rice until combined.
  6. Fill each pepper half with the mixture and top with cheddar cheese.
  7. Bake uncovered for 15-20 minutes until cheese is melted and peppers are tender.
