  • 6 bell peppers
  • 1 lb lean ground beef
  • 1 onion, diced
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained & rinsed
  • 15 oz can corn, drained & rinsed
  • 2 cups cooked brown rice
  • 1.5 cups shredded cheddar jack cheese
  • 1 taco seasoning packet

Instructions

  1. Preheat your oven to 350°F (175°C). Cut bell peppers in half and remove seeds.
  2. Arrange peppers in a baking dish, face up, and drizzle with olive oil. Bake for about 5 minutes.
  3. In a large pan over medium heat, sauté diced onion until soft. Add ground beef and brown completely.
  4. Stir in diced tomatoes, black beans, corn, cooked brown rice, and taco seasoning; mix well.
  5. Fill each pepper half generously with the mixture. Cover with foil and bake for 10 minutes.
  6. Remove foil, add cheese on top of each pepper, and bake uncovered for another 15 minutes until bubbly.
