  • 20 gyozas (or potstickers)
  • 4 garlic cloves (grated)
  • 1 tsp grated ginger
  • 4 cups chicken broth
  • 1 can (14 oz) unsweetened coconut milk
  • 3 tbsp Thai red curry paste
  • 2 tbsp lime juice
  • Optional: chopped chives and assorted vegetables for serving

Instructions

  1. Bring a large saucepan filled with salted water to a boil. Grate the garlic and ginger.
  2. In a large pot, heat vegetable oil over medium heat. Add garlic and ginger, sautéing until fragrant (about 30 seconds).
  3. Pour in chicken broth and coconut milk; add soy sauce, fish sauce, sesame oil, brown sugar, Thai red curry paste, and lime juice. Stir until well combined and simmer for 5 minutes.
  4. Cook gyozas in boiling water according to package directions (2-3 minutes), then drain.
  5. Serve by dividing gyozas into bowls and ladling hot soup over them. Top with chives or your favorite vegetables.
