  • 8 ounces pasta (rotini, fusilli, or penne)
  • 2 medium zucchinis (sliced)
  • 2 cups cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • 3 tablespoons olive oil
  • 1/4 cup fresh basil (chopped)
  • Salt and black pepper (to taste)
  • Red pepper flakes (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the zucchini for about 3-4 minutes on each side until tender and golden brown. Remove from skillet and set aside.
  3. In the same skillet, add remaining olive oil and sauté minced garlic for about 30 seconds. Add halved cherry tomatoes with salt; cook for 5-7 minutes until softened.
  4. Return zucchini to the skillet, add cooked pasta, and toss everything together. Use reserved pasta water if needed for consistency.
  5. Stir in chopped basil, season with salt, pepper, and optional red pepper flakes before serving warm.
