  • 1 tablespoon butter
  • 1 pound boneless skinless chicken breasts
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1/4 cup chicken broth or dry white wine
  • 1/2 cup grated Parmesan cheese
  • 1-2 cups baby spinach

Instructions

  1. Slice chicken breasts in half lengthwise to create four thin pieces. Season each side with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium heat. Cook chicken until golden brown and cooked through (165°F). Remove from skillet.
  3. In the same skillet, sauté onion until translucent, then add garlic and cook for an additional minute. Stir in sun-dried tomatoes and Italian seasoning.
  4. Gradually whisk in chicken broth followed by heavy cream and Parmesan cheese; bring to a simmer until thickened.
  5. Add spinach to wilt, then return chicken to the skillet, spooning sauce over the top.
