Ingredients

Scale
  • 2 tbsp olive oil
  • 1 cup chopped broccoli
  • 1 cup finely shredded carrots
  • 2 tsp minced garlic
  • 1 cup orzo
  • 2 cups chicken broth
  • 1 oz cream cheese
  • 1/2 cup parmesan cheese

Instructions

  1. Prepare the vegetables by chopping the broccoli into small pieces and shredding the carrots.
  2. In a medium pot, heat olive oil over medium heat. Sauté the vegetables and garlic for about 5 minutes until softened.
  3. Add the orzo and chicken broth to the pot; bring to a boil. Reduce heat and cook for 10-15 minutes, stirring occasionally.
  4. Once the orzo is tender and most of the broth is absorbed, stir in cream cheese and parmesan until melted and creamy.
  5. Allow it to cool slightly before serving.
