  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 bunch kale (chopped)
  • 1 cup heavy cream
  • Red pepper flakes (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes.
  2. Stir in the diced onion and sauté for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
  3. Add diced potatoes and pour in chicken broth. Bring to a boil, then reduce to simmer for about 15 minutes or until potatoes are tender.
  4. Mix in chopped kale and red pepper flakes (if using). Cook for an additional 5 minutes.
  5. Lower the heat and stir in heavy cream. Season with salt and pepper to taste, warming through for another 2-3 minutes before serving.
