  • 2 tbsp chopped garlic
  • 1 large shallot (chopped, or yellow onion)
  • 1.5 tbsp chopped ginger (3 thin slices)
  • ⅔ cup chopped carrots (1 medium size)
  • ⅔ cup chopped celery
  • 5-6 whole piece canned water chestnuts
  • ½ lb. raw shrimp (peeled and deveined)
  • 2 tbsp avocado oil
  • ½ lb. ground chicken
  • ¼ tsp coarse salt (or more to taste)
  • ⅛ tsp white pepper (or more to taste)
  • 3 tbsp unsalted almond butter (or peanut butter)
  • 2 tbsp coconut aminos (or 1 tbsp soy sauce)
  • 2 tsp hot sauce (optional)
  • 3-4 tbsp apple juice (or water)
  • 1-2 heads butter lettuce (or a small iceberg lettuce)
  • 3 tbsp toasted almonds (cashew nuts, or peanuts, roughly chopped)
  • 1 bulb scallion (chopped)

Instructions

  1. Prepare ingredients by chopping garlic, shallot, ginger, carrots, celery, water chestnuts, and scallions. Rinse shrimp under cold water.
  2. Heat avocado oil in a skillet over medium heat. Sauté garlic and shallot until fragrant; add ginger and cook for another minute.
  3. Add carrots and celery to the skillet; cook until slightly softened. Then add shrimp and cook until pink.
  4. Push mixture aside; add ground chicken to the skillet and cook until browned.
  5. Season with salt, white pepper, almond butter (or peanut butter), and coconut aminos (or soy sauce). Adjust consistency with apple juice or water if needed.
  6. Scoop filling into lettuce leaves; top with toasted nuts and scallions before serving.
