  • ½ cup unsalted butter (or vegan butter)
  • 2 cups all-purpose flour
  • 1 cup packed light brown sugar
  • 1 cup granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1 cup almond milk (or another type of milk)

Instructions

  1. Preheat the oven to 350°F. Grease a 9" x 13" baking dish.
  2. In a bowl, combine cold butter, flour, sugars, and cinnamon to create the crumb topping.
  3. In another bowl, whisk together flour, baking powder, cinnamon, and salt.
  4. Using a stand mixer, cream softened butter and sugar until smooth. Add eggs, bananas, and vanilla; mix well.
  5. Gradually add dry ingredients and milk to the banana mixture until combined.
  6. Layer half the batter in the baking dish, sprinkle with crumb topping, add the remaining batter, then top with more crumbs.
  7. Bake for 50–55 minutes until a toothpick comes out clean.
