  • 500 grams chicken
  • 2 large onions (sliced)
  • 2 tsp ginger garlic paste
  • 2 tsp red chili powder
  • ¼ tsp turmeric powder
  • ½ tsp coriander powder
  • Black pepper (to taste)
  • ¼ tsp garam masala powder
  • 2 tbsp coconut oil (plus more for frying)
  • Curry leaves (a handful)
  • Salt (to taste)

Instructions

  1. In a deep frying pan, heat coconut oil and fry the sliced onions until golden brown. Remove and set aside.
  2. In a mixing bowl, combine the chicken with ginger garlic paste, red chili powder, turmeric powder, coriander powder, black pepper, garam masala powder, salt, curry leaves, and 2 tablespoons of coconut oil. Mix well to coat the chicken evenly.
  3. Incorporate the fried onions into the marinated chicken mixture. Cook on medium heat until the chicken is fully cooked through and the gravy reduces to a dry consistency.
