  • 2 to 3 celery sticks, chopped
  • 2 to 3 garlic cloves, minced
  • 1/2 tablespoon fresh rosemary
  • 1/2 tablespoon fresh thyme
  • 1 pound chicken breast
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 1/2 pounds potatoes, cubed
  • 4 cups chicken broth
  • 1 cup low-fat cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add onion, carrots, celery, and garlic; sauté until softened (about 5 minutes).
  2. Add the chicken breast; cook until browned on all sides.
  3. Sprinkle flour over the mixture while stirring continuously. Gradually add chicken broth to prevent lumps.
  4. Stir in cubed potatoes and herbs; bring to a boil then reduce heat. Cover and simmer for about 25 minutes until potatoes are tender.
