  • 1 yellow onion (diced)
  • 10 cloves garlic (minced)
  • 1 lb carrots (peeled and diced)
  • 2 large russet potatoes (peeled and diced)
  • 32 oz vegetable broth
  • 2 cups broccoli florets (finely diced)
  • 8 oz yellow sharp cheddar cheese (freshly grated)
  • 2 cups whole milk
  • 2 tablespoons all-purpose flour
  • Salt (to taste)

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Sauté minced garlic and diced onion until soft.
  3. Add diced carrots; cook for another 5 minutes.
  4. Stir in diced potatoes and vegetable broth; boil until tender.
  5. In a bowl, mix whole milk and flour; add to boiling soup while stirring.
  6. Add broccoli florets; simmer for 10–15 minutes.
  7. Stir in grated cheddar cheese until melted.
  8. Season with salt before serving.
