  • 1 Tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast (or 2 ¼ teaspoons)
  • 4 ½ cups all-purpose flour
  • ¼ cup melted butter
  • 10 cups water
  • 2/3 cups baking soda
  • 1 large egg yolk with 1 tablespoon of water
  • Pretzel Salt

  1. In a stand mixer bowl, combine warm water, sugar, and salt. Sprinkle yeast and let sit for 5 minutes until foamy.
  2. Add flour and melted butter; mix on low speed until combined, then knead on medium speed for about 4 to 5 minutes until smooth.
  3. Transfer dough to an oiled bowl and cover; let rise in a warm place for about 50-55 minutes or until doubled in size.
  4. Preheat oven to 450°F; line two baking sheets with parchment paper.
  5. Boil water mixed with baking soda in a large saucepan.
  6. Divide dough into eight pieces and shape into pretzels.
  7. Boil each pretzel for about 30 seconds; remove with a spatula and brush with egg wash.
  8. Bake for approximately 12 to 14 minutes until golden brown.
