  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate
  • 56 g butter
  • 2 large eggs
  • 100 g caster sugar
  • 90 g demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating.
  2. Melt dark chocolate and butter together in a heatproof bowl over simmering water, then stir in the vanilla.
  3. In another bowl, whisk eggs and sugars until fluffy.
  4. Sift dry ingredients into a separate bowl and mix in chocolate chips.
  5. Fold melted chocolate mixture into the egg mixture gently, then incorporate dry ingredients until just combined.
  6. Scoop onto lined baking tray and bake for 12-14 minutes until set but soft in the center.
  7. Allow to cool slightly before transferring to a wire rack.
